The forests of Sweden are bursting with all sorts of berries—wild raspberries, blueberries, and lingonberries. Mushrooms are abundant too.
But if you want to enjoy them, you'll have to put in a bit of effort. Berry picking is no easy feat! Luckily, in Sweden, we have a special comb that helps make the task a little easier.
My middle child is absolutely wild about berries, so one afternoon, we set off on an adventure to fill our basket. However, more berries ended up in our tummies (with blue-stained hands and tongues as evidence) than in the basket. We managed to gather just enough for some muffins—rather than a blueberry pie—but the muffins turned out deliciously anyway.
These are delightfully dense and slightly squidgy, thanks to the oats. The sweetness only comes from the bananas so they really require those brown almost black bananas (or add a spoon of maple syrup or sugar). They're still absolutely irresistible and make a perfect snack for both little and big appetites, any time of the day.
