After a whirlwind week in London, it was lovely to return to the normality of being a mum and enjoying village life in the South of Sweden. Living by the sea often feels like being on vacation, especially when you can nip down to the beach after school. Right now, the hoards of Stockholmers who have summer houses here haven’t quite arrived, so the place is in limbo. Seasonal haunts are opening up again in anticipation, beach huts are being cleaned down, and keys are handed over to guests renting them for the season.



With the beach so close, I’m always looking for snacks that can be easily stuffed into a container to feed those hungry mouths when all the splashing, crab fishing, and swimming gets tiring. These crispy hot pockets, despite their name, can be eaten hot or cold. They can also be easily paired with a nice green salad (or the wild broccoli I recently discovered) for a light lunch or dinner.
