It’s funny how some places have a smell. Walk past a Lush, and you know it instantly. Same with Subway - overpowering, sweet bread, slightly plasticky. And there used to be this boutique in Paris, Colette (RIP), which you could smell from a few streets away. All cool girl energy and niche products.

Subway’s still going strong in Paris, surprisingly. And while I don’t understand how it survives in a city full of proper boulangeries and incredible charcuteries, it did inspire this recipe (sort of). Because if you are going to put meatballs in a baguette, let’s do it properly.

This recipe is inspired by my all time favourite French movie (even though it’s more than 30 years old it still feels contemporary). There’s a short scene where the main characters are eating on top of a rooftop in Paris. Flavours that have become part of the French eating culture.

Enter: merguez meatball baguettes. Spiced lamb meatballs, slathered with my tahini tricolore slaw, and tucked into crusty little baguettes that soak up all those pan juices. Hot, messy, packed with flavour. Basically the anti-Subway.
