Recipe: One pot chicken soup with a fiery relish
A comforting crowd-pleaser that's effortlessly simple to whip up {gf, nf, df}
After my first week back from Sydney filming Australian Bake Off, I got straight into cooking for a family of six. With after-school activities, football, tennis, and music lessons, there wasn’t much time to cook. On top of that, one of my kids had a nasty fall that day, leaving him with a busted lip (don’t worry, he’s all good now). I wanted to make something wholesome and comforting, and there’s nothing better than a bowl of hearty chicken soup as the days grow shorter and the air turns crisp. It’s a dish I make at least once a week—it’s just that easy to throw together, even with the chaos of busy family life.
The chicken is gently poached, keeping it juicy and tender while filling the kitchen with the soothing aromas of seasonal vegetables and fragrant broth. A quick chill in an ice bath locks in the juiciness, so you can serve up the soup faster—perfect when you’re eager to cosy up with a warm bowl after a long day. You can throw in some additional seasonal veg, which cook gently in the broth, adding depth and heartiness. Topped with a fiery chilli relish for a warming kick, this soup is just what you need to chase away the chill.
Plus, any leftover chicken and relish can be repurposed the next day, served over rice with fresh vegetables for a simple yet satisfying lunch or you could make these handy little pies.
