Recipe: Roasted Tomato and Strawberry Pappardelle

In the hope of keeping the spring-summer vibes, I've started cooking with ingredients that spell out summery weather, such as strawberries. There's just something about their juicy sweetness that screams sunshine to me. And while adding strawberries to salads or instead of tomatoes is nothing new, I thought, "Let's shake things up a bit!"
Taking a cue from the Italians with their "Fragole all’aceto balsamico." Basically, it's strawberries drizzled with balsamic vinegar, sometimes served with vanilla gelato or ricotta. I decided to give it a modern twist inspired by that TikTok craze from last year—the one-pan feta pasta sauce!
Juicy strawberries are roasted with creamy feta, cherry tomatoes, and a splash of olive oil. Roasting the fruit intensifies the flavour and works perfectly with the salty creaminess of the feta. This dish requires minimum effort and produces maximum flavour.
