When it comes to strawberries, the homegrown ones are always worth the wait. I have childhood memories of visiting pick-your-own farms in the English countryside, though more often than not, I’d eat more strawberries than actually made it into my basket.
Later, when I lived in Paris, it was the scent of Gariguette fraises that would pull me in at the market. I’d walk away with several punnets tucked into my bag, no real plan, just the knowledge that they’d be gone within days. Now in Sweden, the arrival of summer is signalled by poster-sized strawberry signs popping up along the roadside. And if the wind blows in just the right direction, I catch the sweet perfume of ruby red berries drifting down the lane towards the strawberry man’s stand.
Of course, when in season, strawberries need little to shine but they also pair beautifully with savoury flavours. This salad brings together salty feta, peppery roquette, and the cooling freshness of cucumber and mint. A little nod to Wimbledon, where Pimms is the drink of choice - always served with strawberries, cucumber, mint, and a slice of orange.
The rolls are lovely on their own, but they’re even better dipped into a fiery mango salsa. A little sweet, a little salty, and totally summer on a plate.
