Recipe: Shepherdless Pie
The perfect comfort food that can be made in advance and even frozen {pb, nf}
A meat free version of one of my all time favourite British dishes.
The trick to this dish is placing a smoky tea bag in with the puy lentils, giving them an even richer quality. Add a handful of mushrooms and a generous spoonful of marmite and this vegan dish rivals any traditional Shepherd's pie.
I've opted for creamy polenta instead of mashed potato to save time, without compromising on a crisped up topping.
Top tips: It's always best to constantly stir polenta to avoid lumps. Double the quantity and freeze a batch in an oven/freezer proof dish.
