This month, I’ve found myself reaching for meals that feel light yet satisfying — meals that don’t weigh you down but still feel like a treat. Maybe it’s the longer evenings or the first proper barbecue of the season, but there’s something about June that makes me want to eat alfresco, with a chilled glass in hand and something vibrant on the plate.
So this meal plan is full of that spirit: crisp, colourful, full of crunch and zing. Think chilled courgette soup swirled with yoghurt and topped with smoky grilled prawns —sunshine in a bowl. Or tahini-dressed slaw piled into crusty baguettes with spiced lamb meatballs — messy in the best way. There's also something sweet and lemony to round things off when only pudding will do.
Each recipe is simple, yes but more importantly, they're the sort of meals that give you energy and joy. Just the thing as we head into high summer.
