Le Petit Meal Plan #2
The salad edition: a week's worth of meals plus a little something sweet.
Summery weather is here (even if it's been a bit of a washout so far), and this month’s meal plan is all about salads! But don't worry, these aren't your ordinary side salads. Get ready for the Salad Edition: hearty, delicious, and perfect for satisfying any hunger.

MEAL #1 - A twist on a classic {nf, gf *, pb*, df*}
Recipe: B.L.S. Salad
A Khoo play on the classic Bacon, Lettuce and Tomato but I switch the tomato out for some strawberries with them being in season. Strawberries add a tart sweetness to the salad that goes oh so well with the salty smokiness of the bacon or my facon. This makes an excellent packed lunch or eaten as leftovers the following day (make sure to take out of the fridge 30 minutes before eating).
MEAL #2 - Eat the rainbow {gf, nf, df, v, pb}
Recipe: Rainbow Kraut Bowls
This dish relies on the flavour packed Haitian inspired kraut which is super versatile as a side, garnish or topped with a fried egg. It keeps really well making this an easy way to throw together a "bowl" with some precooked lentils or other pulses as a base then a crunchy vibrant salad plus a protein of some sort.
MEAL #3 - A little spice is nice {pb, df, gf, nf}
Guest Recipe: Uyen's Green Papaya Salad
{no paywall} A beautifully balanced papaya salad with a zing of pomelo, sweet apple, and earthy artichokes. A chilli lime dressing to finish the recipe is made even better with a generous scattering of pista.
MEAL #4 - A salad that doesn’t wilt {pb, df, gf, nf}
Recipe: Carrot, citrus & kale salad
Unlike the traditional salad leaves (hello iceberg, cos and co.) that like the delicate treatment, kale likes a good kneading and doesn't mind sitting around. Think sports massage rather than a spa treatment. This salad doesn't mind sitting around either and can be quite happily be made the day before (sprinkle the seeds on just before serving).
MEAL #5 - An unexpected ingredient {pb, df, nf}
Recipe: Wannabe Caesar Salad
This dressing is a real game-changer. Creamy, punchy and packed with all those Caesar salad flavours without a cow in sight. I love a Caesar salad with the salty, umami and creamy dressing on those crisp green leaves, perfect for large party entertaining.
Something for your sweet tooth… {df, gf, v, pb*}
Recipe: Fudgsicles
Homemade magnums but much better and no ice cream machine required! The low water content in the ingredients create an indulgent, almost chocolate truffle-like center (no ice crystals) with that signature chocolate snap.
